Nothing says summer time like a Strawberry Margarita on ice paired with fresh limes. This recipe takes that craving and makes it a dessert. What could possibly be better?

I love these cupcakes, and so does everyone who gets to try them. The rich pink color of the cupcakes and the sour lime frosting always turns out to be a hit.
The trick here is to replace the majority of the water that the recipe calls for with the strawberry margarita mix. Obviously, the more margarita mix used, the brighter pink the cupcakes turn out to be. However, the mix also makes the cupcake more and more sweet, find a balance that works for you, I listed my water/margarita mix ratio above.
Instructions:
Cupcakes
1. Make cake to box specifications, using egg white recipe. Replace 75%-80% of the water the recipe calls for with Strawberry Margarita Mix. Check the cupcakes frequently. I have noticed that because there is less water the cupcakes cook more quickly.
Frosting
1. Empty whole contents of the frosting can into small mixing bowl
2. Squeeze the juice of half a lime into the mixing bowl, use spatula to fold frosting continuously until juice is completely absorbed my frosting.
3. Place mixing bowl in refrigerator for 5 minutes to firm frosting before applying to cupcakes
Dress cupcakes with fresh lime, strawberries, or both. A bit of sugar sprinkles not only added a crunch but also looks like the salt you may find on the rim of a margarita.
